This presentation is an introduction to the International Dysphagia Diet Standardization Initiative (IDDSI), a framework to improve the safety and care for individuals with dysphagia, a swallowing disorder which affects an estimated 560 million people worldwide.

Attendees will learn the reasons why IDDSI came into being and the eight levels of viscosity and texture modifications that are recommended.  Additionally, they will be able to demonstrate how to test liquids and foods to ensure they meet IDDSI standards and learn where to go and who to contact for further information
